Frijoles a la Charra
(Spicy Bean soup)

Ingredients:
2 1/2 cups Pinto beans (cleaned)
8 Slices Bacon strips (chopped)
1 Tomato (diced)
2 Small Onions (diced, one whole)
6 to 8 Serrano Peppers or of choice (diced)
1/2 cup Cilantro (diced)

Place beans in pot and fill with water (about 4 inches above
beans). bring to boil. Reduce heat to medium and add bacon bits and spice mix to beans. Add whole onion to pot. Let boil on medium heat until beans are tender (about 2 hours). Add more hot water to beans as needed (this will speed up the cooking process). After beans are cooked, remove whole onion and discard, then add minced onions, tomatoes, hot peppers, and cilantro to pot and bring to boil. Boil for another 15 minutes.
Serve in cups as a side dish.

Follow the above recipe above, but do not add the
vegetables at the end of the recipe. Remove the whole onion and discard.
To make refried beans, remove about 2 1/2 cups of the
beans with just a little of the soup and place in skillet with 3 tbsp of vegetable oil. Mash beans and fry till the beans are firm or until they have reached the desired texture you prefer.
Another alternative, you could fry about 6 slices of bacon
(chopped), until crisp, then add the beans and mash then fry.
These beans can be used as a side dish or for nachos.
