Roasted Quail or Dove
|

Ingredients:
10 to 15 Birds
1 Package 12 oz Bacon slices
Butter
Serrano or jalpeņo pepper
Fresh Cilantro
Onion
Green Pepper
Salt and Pepper to taste

Rinse dressed birds in sink and pat dry with paper towels. Align
birds on cutting board and brush with butter to coat. Insert one hot pepper under breast of bird, then wrap with a slice of bacon. Get foil and wrap four at a time with foil paper. Before wrapping add a generous amount of cilantro, onion, and green pepper. Then seal. Place packages on medium coals for about 1 hour turning at least 3 times during cooking. After cooking time is done, unwrap top of packages and leave on grill for 15 minutes longer to brown and crisp bacon. Serve on bed of rice with vegetables. Salt and pepper to taste. Serves 4-6

In the Oven:
Follow instructions above. But instead of wrapping with foil, place
birds in large casserole dish with cover. Cover and place in preheated oven at 350 degrees for one hour. Uncover dish and cook for 15 minutes longer to brown. |
