Chorizo con Huevo
Ingredients:

2 Chorizo links
5-6 Eggs
1/2 Small Onion (minced) optional
1/3 Cup Cheddar or American Cheese
Salt and Pepper to taste
In a large non stick skillet on medium heat, break up
chorizo links and fry. If chorizo is lean, add 3 tbsp of
vegetable oil. After chorizo starts to fry, you can add
onion and saute with the chorizo till tender. Add eggs
and scramble until the desired texture of the eggs are
reached. Sprinkle with cheese if desired and serve.
