Migas

(Fried Corn Tortillas and Eggs)

Ingredients:
4-6 Corn Tortillas (cut in 1/2 squares)
6 Eggs
1 Small onion (chopped) optional
6 Slices Bacon (chopped)
1 Slice Green Pepper (chopped)
1/3 Cup Cheddar or American Cheese
Salt and Pepper to taste

In a large non stick skillet, fry bacon bits till crisp. Add
onions and green pepper and saute in bacon grease till tender. Add tortilla pieces and fry till crisp. Add eggs and scramble on medium heat till cooked. Sprinkle Cheddar Cheese over top of migas and serve hot with salsa.
