Beef Enchiladas
Beef Filling:

1 1/2 lbs Ground Beef (lean)
1/2 cup Onion (minced)
1 slice Green Pepper
(minced)
1/2 tsp Spice Mix
Ingredients:

12 Corn Tortillas
Vegetable Oil for frying
1 package Enchilada sauce*
2 cups Shredded American or
Cheddar Cheese
In 12 inch skillet heat vegetable oil and dip tortillas in hot oil till
soft. Set aside. Drain oil, leaving 2 tbsp. Add ground beef
and brown. Drain any excess fat. Add onion, green pepper,
and spice mix and simmer until onion, green pepper start to
fry. Turn off heat. Prepare enchilada sauce according to
directions. Get one tortilla and add 2 tbsp of meat mixture
with 1 tbsp cheese and roll. Place in casserole dish until all
tortillas have been filled (side by side). Pour enchilada sauce
over tortillas and top with remaining cheese. Bake in oven at
350 until cheese is melted.

* Chili con Carne can be used instead of enchilada mix.
